Nico´s pancakes

At least once a week we have pancakes for breakfast. Nico is the pancake master and Samuel loves them. Lately we started to experiment different kinds of pancakes. 

Ingredients
egg
flower: here are some alternatives that change your pancake
1/2 wheat and 1/2 wholegrain spelt or use 100% buckwheat or instead of flower you use 3 ripe bananes) 
vanilla sugar, 1/2 tsp
salt, pinch of salt
butter/ghee/veggi oil
milk/water
If you want the pancake thicker,  American style, add some bakking powder, 1 tsp. 

Also very tasty is a pancake made out of 1 egg and you fill it with cottage cheese, grated apple, cinnemon and fresh oregano if you have.

Filling
Jam
Butter & sugar
Palmtree honey/Marple siroup/Apple sirup
Rasperries
Banana
Almond/Chocolate paste
Cheese and bacon


Preparation
Mix all the ingredients to a smoth dough. Use a non-stick frying pan and fry thin pancakes for 2-3 min each side. For the cheese& bacon variante you bake the bacon first, then add the dough and once the pancake is brown for one side you add the cheese and fold half of it.
