Canarian watercress soup

"Potaje de berros"

This soup is very common on the Canary Island and every island has his own version, actually every cook has his own version, so do I. Means you can decide which vegetables you take, but corn shouldn´t be missed as well as the watercress. 

Ingredients (serves 4-6)

  • 2 bunches watercress, cut 
  •  200 grams of dried white beans
  •  3 big potatoes, cubes
  • 200 gr. green beans
  • 2 corn cobs
  •  1 onion, cubes
  • 1 green pepper
  • 1 piece of pumpkin
  •  2 clove garlic, sliced
  •  2 ripe tomatoes, cubes
  •  1 pinch of cumin
  •  1 pinch of saffron
  •  1 pinch of salt and black pepper
  • addtionaly you can use also 500gr pork chop (this is actually the ways it is eaten here, but I cook the veggetarian variant)

Preparation

Chop the onion and green pepper and put them to fry with a little bit of oil.
Cut the pork rib stick and add it to the onion and pepper once they are soften. Add the potatoesand the rest of the veggies. Cover with hot water, season and cook over low heat for 20-25 minutes. Shortly before the end you add the watercress (reserve some for garnish) and voila, the Canarian soup that is eaten with bread of Gofio. 

 

Banana bread

The nice thing about this recipe is that you can always change the ingredients and always try a new version. Banana bread is great for us during sailing. It stays good for at least 2 days, though it never survives so long, and it´s a good energry and healthy bron. Samuel loves it and can eat up to 3 pieces at once if we let him. He eats it with butter and calls it also ¨Brot".

 Ingredients
⦁    3 really ripe bananes
⦁    180gr whole flour (I use what we´ve got from spelt, kamut etc. everything is fine) 
⦁    2 eggs
⦁    3 spoons coconut oil (or other oil) 
⦁    1.5 spoon melk (whatever milk you wanna use)
⦁    2 tbs full baking powder
⦁    3 spoons agave/honey/ palmtree honey/marple sirop
⦁    1 spoon chia seeds (if you have them in house) 
⦁    2-3 spoons of dry fruits cut in pieces
⦁    2-3 spoons sunflower and pumpkin seeds
⦁    1 spoon flax seeds 

Preparation

prewarm the oven to 175C.  Mince the bananes first, than add the honey, oil, flour, backing powder, milk, eggs and add at the end the fruits and nuts. For about 1 hour, maybe even a little bit more in the oven. Check with a toothpick how sticky it still is. 

Tomatole with avocado

Samuel likes to help in the kitchen a lot and I let him try stuff out, even if it´s a big mess afterwards. Luckily we live on a boat and we can clean everything with water, no carpet or nice sofa´s that can be ruined. So today we made a "tomatole" insteed of a guacamole. We had only cherry tomatos but 3 ripe avocados, but we still wanted to make a guacamole. Since cherry tomatos are difficult to cut in little pieces, I decided to cut them in a kitchen machine and Samuel helped me with it. Samuel loves to press the button and suddently we had more tomatoes than actually needed. And voila instead of a guacamole it turned out to be a tasty tomatole, a little bit sweet and creamy. 

Ingredients

  • 250gr cherry tomatos
  • 3 ripe avocados, little ones
  • 2 cloves of garlic, smashed
  • salt, pepper, tabasco, lemon juice

Smash the cherry tomatos in a blender or kitchen machine, smash the avocados with a fork and the garlic with a garlic press. Add salt, pepper, some drops of tabasco and some lemon juice. Mix it all together in a bowl and serve it with a piece of bread or cracker. Can be  also served as a salsa to a grilled piece of white fish. 

Parsley soup

Ingredients (serves 4)

1 bond of parsley, choped
300gr potato, cubes
700gr veggi bouillion
200gr creme of creme freche
salt, pepper, lemon juice

Preparation
Bring the potatos to boil together with the bouillion for about 20min. After 10minutes add the creme as well. Once cooked you blend it. Take 200ml of this soup, add the parsley and blend it as well till you get a nice paste. Than add it to the rest of the soup. Taste it and season with salt, pepper and some lemon juice. It might be that it also get a nice taste of you add also a little bit of white wine while it cookes, worth a try. Since Samuel likes this soup a lot, I will wait a little bit.

Broccoli Soup

This is probably the easiest and fastest recipe ever and still it tastes pure and good. You can cook this soup actually with every veggi that you´ve got on the boat, but broccoli stays our favorite. 
We eat almost daily soups. It is an easy way to eat many veggetables at once and Samuel loves soup. Even if it´s hot outside, a soup fills in a good way. 

Ingredients
⦁    1 large broccoli
⦁    Veggi Boullion without yeast and sugar
⦁    Water, enough to cover the broccoli, not more

Preparation
Boil the broccoli together with the boullion and then mix it with a hand blender. Voila!

Kimchi salad

Since the moment I tasted kimchi till now, I can't miss it anymore. (Thank you Maiko!) Probably because I grew up with all kind of fermentated stuff like sourdough bread, sauerkraut, pickels, homemade yogurth and cheese, water kefir, bortsch etc.. Luckily I can get kimchi here in Las Palmas in many Asian supermarkets, but sonner or later I will have to make my own kimchi and I´m curious how it will taste. 


What is kimchi? Kimchi is a spiced fermanted cabbage. It is a Korean dish and it is a preparation of fermented spiced (ginger, garlic, chilli, salt, soy sauce) veggies, most commun are cabbage or radish. I prefer cabbage. 

Ingredients (serve 4)
⦁    Kimchi
⦁    1 Cucumber, sticks
⦁    1 Tofu (alternative, doen´t have to be), silken, cubes
⦁    2 Thuna (could be also makreel or sardines) 
⦁    5 Raddish, sticks
⦁    2 Spring onions, thin sliced
⦁    Sesam seeds, handfull
⦁    Soya sauce

You can use the veggies you like, I´m sure it tastes good with almost everything, as long as there is kimchi. 

Preparation

Cut all the ingredients and put them in layers on the plate, than sprincle with soy sauce and sesam seeds. We eat the salad with chop sticks. Hmmmm, yummi...
You could also wrap all this ingredients together in a salad leaf or a rice paper and eat is a a wrap.
